Taste training

Sharpening the senses of his interested guests, promoting creativity by the inspiring ambience and raising a new awareness of the sensory interplay between aromas, textures and temperatures - this is the objective behind Thomas Bühner's taste training sessions at la vie.

The homely taste training sessions have been perfectly adapted to the architecture of the old Steinwerk. The preparatory kitchen, with bar area and recessed seated alcoves, is adjacent to the chef's kitchen, equipped with every refinement and high-tech devices, comprising a worktop with induction hobs, wok burners and teppanyaki. A cosy eating area with a large table inviting you to enjoy a sociable get-together and to consume the delicacies prepared, completes the working areas.

Cheese is the fragrant result of the metamorphosis of cow's, sheep and goat's milk. It matures under the influence of salt, air, time and space, and plenty of tender loving care. But how can I tell when a cheese has the perfect degree of maturity, where and how which cheese is made, the best way to store a certain cheese, the correct cheese knife for each cheese and how to use it? Once these questions have been answered, your enjoyment of unpasteurised cheese will be crowned with a degustation of harmonising wines from la vie wine loft of the Altes Steinwerk. Our sommelier Sven Oetzel combines a nuanced arrangement of cheese and wine delights for the palate.

On our "Introducory Course", novices learn the basic skills required to prepare  a delicious meal in just three hours. During la vie principles of good taste course one specific ingredient is always focused on. You will learn all you need to know from how to shop for the right high-quality ingredients through to perfect preparation and presentation techniques under the guidance of the renowned la vie kitchen team.
By the end of the month, you will have practised and learned how to prepare a whole set meal.

This is the meeting point for cooking enthusiasts, cooking clubs and interested amateurs.  Here you will gain the finishings touch for your ingenious creations, as well as raising your quality awareness and sensual perception. Guided by Thomas Bühner and his team, you will prepare a delicious four-course meal. The focus is on refining exquisite ingredients and creatively arranging the individual dishes. This course will help you to create an exquisite meal that can also be prepared at home.
